The default color for a x or y axis on a OOcalc chart is grey 30%.  I commonly
change this to black.  However, when I close the file and save it, and then
reopen, I find that it has changed back to grey 30%.  

This is very annoying!  

Fixes kindly appreciated.

Most probably duplicate to issue 109879, which should be fixed in the latest
3.3.0 developer snapshot: http://download.openoffice.org/next/
